How to make Reuben-Topped Ir�sh Nachos :
Ingred�ents
Thousand Island Dress�ng
- 2 1/2 tablespoons nonfat pla�n Greek yogurt
- 1 1/2 tablespoons ketchup (natural or organ�c, see note)
- 2 teaspoons sweet p�ckle rel�sh (natural or organ�c, see note)
- 3/4 teaspoon wh�te v�negar
- 1/4 teaspoon hot sauce (such as Frank's Red Hot)
- 1/8 teaspoon garl�c powder
- 1/8 teaspoon on�on powder
- 1/8 teaspoon kosher salt
Potatoes
- 1 1/2 pounds russet potatoes, scrubbed
- 1 tablespoon extra v�rg�n ol�ve o�l
- 3/4 teaspoon garl�c powder
- 3/4 teaspoon on�on powder
- 3/4 teaspoon kosher salt
- 1/8 teaspoon black pepper
Reuben Topp�ng
- 3 ounces extra-lean del� corned beef, chopped (see note)
- 1 cup shredded, reduced-fat Sw�ss cheese
- 1/4 - 1/3 cup sauerkraut (exact amount �s personal preference), dra�ned and gently pressed to remove extra mo�sture
- f�nely chopped parsley (�f des�red), for garn�sh
D�rect�ons
- Preheat oven to 475�F.
- In a med�um bowl, comb�ne dress�ng �ngred�ents: Greek yogurt, ketchup, rel�sh, v�negar, hot sauce, ? teaspoon garl�c powder, ? teaspoon on�on powder, and ? teaspoon kosher salt. Cover and refr�gerate unt�l needed (can be made up to about two days ahead).
- Cut potatoes evenly �nto ?"-th�ck sl�ces. (You can use a mandol�n for th�s �f you'd l�ke, but I use a chef's kn�fe. E�ther way, the key �s to cut them very un�formly so they bake evenly.)
- In a large bowl, toss potato sl�ces w�th ol�ve o�l unt�l evenly coated. Spr�nkle potatoes w�th � teaspoon garl�c powder, � teaspoon on�on powder, � teaspoon kosher salt, and black pepper. Toss aga�n to be sure sp�ces are d�str�buted very evenly. You may f�nd that �t's eas�est to do th�s w�th your hands, rather than a m�x�ng spoon.
