INGREDIENTS:
- 2 ?ups frozen tater tots
- 2 tablespoons olive oil
- 8 links breakfast sausage, ?asing removed
- 8 large eggs, lightly beaten
- 1/3 ?up half and half*
- Kosher salt and freshly ground bla?k pepper, to taste
- 1 (16-oun?e) ?an refried beans
- 8 (8-in?h) flour tortillas
- 1 ?up shredded ?heddar ?heese
- 1 ?up shredded Monterey Ja?k ?heese
- 2 Roma tomatoes, di?ed
- 1/4 ?up ?hopped fresh ?ilantro leaves
DIRECTIONS:
- Preheat oven to 400 degrees F. Lightly oil a baking sheet or ?oat with nonsti?k spray.
- ?ook tater tots a??ording to pa?kage instru?tions; set aside.
- Heat olive oil in a large skillet over medium high heat. Add sausage and ?ook until browned, about 3-5 minutes, making sure to ?rumble the sausage as it ?ooks; drain ex?ess fat, reserving 1 tablespoon in the skillet.
